MASALA SUNDAL

After making out some rice, gravy and fritters, i prepared this healthy snack with the leftover sprouted moth beans as a simple sundal using some spices to give them more flavour and taste, they turns out super delicious and i couldnt stop munching them..This masala sundal goes for few spices and spice powder,also gets ready quickly..A nutritious snacks to enjoy with a cup of coffee or tea for snacks, whoever like to have these sort of sundal as side dish (as i do) along with rice,will definitely love this healthy,delicious masala sundal..This is my second entry to CMT-Kathol guest hosted by LG, event by Jagruti..

Heat enough oil,let splutters mustard seeds, urad dal, add immediately the asafoetida powder, fennel seed powder, fry for few seconds, now add the chopped onions, grated ginger, curry leaves,crushed garlic,chopped green chillies, stir until the onions turns transculent, add the cooked moth beans,cook for few minutes, finally add the garam masala powder,put the flame in simmer and cook for few minutes..

Soak red cow peas in cold water for overnite... wash them thoroughly n cook them in pressure cooker with enough salt upto 2 hiss..put off the stove, drain the redcowpeas cooked water n keep aside, can prepare them as rasam..

Cut the onions finely, smash the garlic pods, grate the carrot, n keep everything aside.. Heat 2tsp of oil, add mustard seed, urad dal n red chilli let them splutter, add the chopped onion n cook a while, add the chopped green chillies, grated carrot,garam masala powder,fenne seed powder, ginger pieces,curry leaves as well as smashed garlic pods, cook everything in simmer until the spices n the veggies get well mixed...

Add the already cooked redcow peas to the veggies , stir it occasionally for a while, now add the grated coconut n grated mango to the peas, garnish with coriander leaves..
